Easy Black Beans

Hello 2016!!

With a brand new year ahead of us, many of us are trying to incorporate healthier elements into our everyday meals.  This easy recipe makes a great snack or side to any dish! It’s so quick and delicious that we’ve already eaten these black beans twice in the past week – once paired with jerk chicken and then again with slow cooked carnitas (recipe coming soon). Simply throw low-sodium black beans, green chilis, cumin, garlic powder, salt and pepper in a pot and let it simmer for 10-15 minutes. Top with fresh cilantro and serve warm!

Ingredients
  1. 1 (15 oz.) can low sodium black beans
  2. 1 (4 oz.) can diced green chilies
  3. 1 small onion, diced
  4. 1 tsp cumin
  5. 1 tsp garlic powder
  6. 2 tbsp olive oil
  7. salt and black pepper, to taste
Instructions
  1. In a small saucepan, heat olive oil over medium heat. Add the onions and saute until tender and translucent. Add the can of black beans (do not drain) and green chilies. Add the cumin and garlic powder. Lower heat to medium-low. Simmer for 10-15 minutes, stirring occasionally. Season with salt and pepper, to taste.

    I like black beans a lot. I quite often do something similar to this for a quick and easy side dish to have with rice and some seared rare steak.

    Perfect recipe! Full of protein and low fat – I eat beans in place of meat all the time, although I am not a vegetarian. Love this recipe and will make this for sure! 🙂

    We are huge fans of black beans! One of our favorite dishes is black beans and rice. My friends dad is a local bean farmer so I stock up with all my dried beans in the fall. Thanks for this easy peasy weeknight meal. 🙂
