Blueberry Banana Overnight Oats

I’ll be the first to tell you – I am not a morning person. If we’re being completely honest with each other, this is actually what my mornings look like:

Forty-five minutes is a reasonable amount of time for a grown woman to get out of bed each morning, right?

The one thing that gets me through the morning is having a dependable breakfast that requires little preparation. Overnight oats are so easy to whip up and usually consist of ingredients I already have on hand. They’re filled with probiotics, nutrients, and fiber (so they’ll keep me full all morning) and the combinations are endless, which means they’ll never get boring. I like to combine mine with walnuts or toasted almonds, nut butters, fruit, or granola. Heat ’em up or eat them chilled – it’s totally up to you!

Ingredients
  1. 1/2 cup rolled oats
  2. 1/3 cup vanilla Greek yogurt
  3. 1 cup almond milk
  4. 1 chopped banana
  5. 1 tbsp pure maple syrup
  6. 2 tsp chia seeds
  7. blueberries for topping
Instructions
  1. Combine all ingredients, except the blueberries. Cover and chill in refrigerator overnight.
  2. Top with blueberries and any additional toppings, if you desire (walnuts, slivered almonds, agave nectar, granola, etc.), and enjoy!
