
I’ll be the first to tell you – I am not a morning person. If we’re being completely honest with each other, this is actually what my mornings look like:
Forty-five minutes is a reasonable amount of time for a grown woman to get out of bed each morning, right?
The one thing that gets me through the morning is having a dependable breakfast that requires little preparation. Overnight oats are so easy to whip up and usually consist of ingredients I already have on hand. They’re filled with probiotics, nutrients, and fiber (so they’ll keep me full all morning) and the combinations are endless, which means they’ll never get boring. I like to combine mine with walnuts or toasted almonds, nut butters, fruit, or granola. Heat ’em up or eat them chilled – it’s totally up to you!
- 1/2 cup rolled oats
- 1/3 cup vanilla Greek yogurt
- 1 cup almond milk
- 1 chopped banana
- 1 tbsp pure maple syrup
- 2 tsp chia seeds
- blueberries for topping
- Combine all ingredients, except the blueberries. Cover and chill in refrigerator overnight.
- Top with blueberries and any additional toppings, if you desire (walnuts, slivered almonds, agave nectar, granola, etc.), and enjoy!
