Kale, Carrot, and Apple Green Juice

This green juice is a great way to kick off my workweek and help me forget that my dinner last night was an entire bag of trail mix.

As far as juices go, this is definitely one of my favorites! The greens are packed with vitamins and nutrients, and the carrots and apple add a hint of sweetness. It”s refreshing and revitalizing, and makes a great snack or accompaniment to any meal.

We use the Breville Compact Juice Fountain, which works well for us because cleanup is simple and it makes 2 servings at a time, but there are many wonderful choices on the market, such as these Omega and Hamilton Beach models.

Ingredients
  1. 1 medium cucumber
  2. 3 medium celery stalks
  3. 1 cup parsley
  4. 1 inch piece ginger
  5. 2 green apples
  6. 3 carrots
  7. 4 medium kale leaves
  8. 1 tbsp lemon juice, more to taste
Instructions
  1. Wash all ingredients thoroughly, especially the kale. Chop off any leaves off the celery, and run all ingredients through the juicer.
  2. Serve immediately.
