Classic pesto made with pine nuts, olive oil, garlic, basil, parmesan and lemon – is there anything better? In my opinion, homemade is usually better than store-bought, and with only 6 ingredients (most of which can usually be found in my pantry), this really is one of the easiest things to make!
This lovely sauce can be used on pizzas, pastas, grilled meats, salads, and crusty loaves of bread. When I have extra basil on hand, I’ll make a little jar of this and keep it for paninis and pastas. It’s a great time saver for those busy nights!
- 2/3 cup pine nuts
- 2/3 cup olive oil
- 3 cloves garlic
- 2 cups fresh basil, picked off stems and washed
- 1/4 cup freshly grated parmesan
- juice from 1 lemon
- salt to taste
- In a food processor, blend pine nuts, garlic, and basil. Add olive oil and lemon juice until smooth. Add the parmesan and puree for an additional 30 seconds to 1 minute. Season with salt to taste. Use immediately or store in air tight container and refrigerate.
