Oven “Fried” Asparagus

Here is a fun recipe to shake up that roasted asparagus routine! This is great as a side dish or appetizer for any dinner party or meal and can be easily thrown together in no time at all. Light and crispy with a spicy, refreshing sriracha dip, this dish will definitely have you reaching for more.

For the Asparagus
  1. 1 lb asparagus
  2. 1/2 cup flour
  3. 2 eggs + 2 tbsp water, beaten
  4. 3/4 cup Italian panko breadcrumbs
  5. 1/4 cup freshly grated Parmesan
  6. salt and pepper to taste
For the Sriacha Mayo
  1. 1/2 cup mayo
  2. sriracha
  3. lemon
Instructions
  1. Preheat oven to 425 degrees.
  2. Combine breadcrumbs, Parmesan, and salt and pepper. Dredge asparagus in flour, dip in egg, and then coat evenly with breadcrumb mixture.
  3. Place asparagus in a single layer on lightly greased baking sheet. Bake 7-10 minutes or until golden brown.
  4. Meanwhile, add the lemon and sriracha (to taste) to the mayo to create a refreshing dip.
