Frito Pie is one of those classic childhood meals that never fails to bring back fond memories. (It’s right up there with Dunkaroos, Bubblegum tape, and Surge. Hey, whatever happened to 3-D Doritos?!) As a kid, there was something about being able to create my own delicious dinner and spoon the warm chili over the baked corn chips and then top everything with cheese and sour cream that made these dinners extra fun.
This meal falls under my list of recipes that are inexpensive, easy to throw together, and can feed a crowd. Plus, everyone can customize their meal to their own preferences – just have all the toppings in several containers assembly-line style! It’s ideal for gamedays and the holidays, and best of all, I love that I can toss all the ingredients in a slow cooker and have it ready to go by dinner time. And if I’m not in the mood for all the extras topping, I can enjoy a simple bowl of chili. Simple prep, no mess, and easy cleanup? Sounds like music to my ears!
- 2 tbsp olive oil
- 3-4 garlic, minced
- 1 yellow onion, chopped
- 1 lb angus ground beef
- 1 (15 oz) can tomato sauce
- 1 can pinto beans, drained
- 1 can kidney beans, drained
- 1 can Rotel
- 3 tbsp chili powder
- 1 tsp oregano
- 1 tsp dried parsley
- 1 tsp dried basil
- 2 tsp ground coriander
- 1 1/2 tsp kosher salt + more to taste
- In a large skillet, heat olive oil over medium-high heat. Add the onions, and saute until tender, about 5-6 minutes. Add the garlic and stir for an additional 1-2 minutes. Add the ground beef and cook until no longer pink. Drain.
- In a slow cooker, mix all ingredients with the ground beef mixture until well combined. Cook over low heat for 6-8 hours.
- Chili
- Frito Lay corn chips
- sour cream
- shredded mexican cheese
- chopped cilantro
- jalapenos, optional
- pico de gallo, optional
- Place corn chips in a bowl. Top with warm chili and garnishments. Serve warm!

Looks delicious. I think I need to try. But you will laugh now: I would need to buy a crockpot first π I have all those fancy pots and pans; And NO crockpot!
