For the Asparagus
- 1 lb asparagus
- 1/2 cup flour
- 2 eggs + 2 tbsp water, beaten
- 3/4 cup Italian panko breadcrumbs
- 1/4 cup freshly grated Parmesan
- salt and pepper to taste
For the Sriacha Mayo
- 1/2 cup mayo
- sriracha
- lemon
Instructions
- Preheat oven to 425 degrees.
- Combine breadcrumbs, Parmesan, and salt and pepper. Dredge asparagus in flour, dip in egg, and then coat evenly with breadcrumb mixture.
- Place asparagus in a single layer on lightly greased baking sheet. Bake 7-10 minutes or until golden brown.
- Meanwhile, add the lemon and sriracha (to taste) to the mayo to create a refreshing dip.
