Baked Fish Tacos with Creamy Avocado Dressing

Ingredients

For the fish

  • 1.5 lbs tilapia, cod, or mahi mahi filets
  • 1/2 tsp paprika
  • 3/4 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp cayenne (optional)
  • olive oil
  • corn tortillas, warmed

Toppings

  • cabbage slaw
  • cilantro
  • lime slices
  • avocado dressing (see below)
  • cojita cheese (optional)

Avocado Dressing

  • 1 avocado (ripe)
  • 1 cup cilantro
  • 1 garlic clove
  • 1/2 cup sour cream
  • 1/4 cup water
  • 1 large lime, juiced
  • 1 tsp honey
  • 1/2 tsp salt, more if desired

Instructions

For the fish

  1. Preheat oven to 375 degrees.

  2. Combine dried spices together in a small bowl.

  3. Place tilapia filets on lightly oiled baking pan. 

  4. Rub oil on filets and sprinkle on seasoning to your desired amount (feel free to save extra seasoning for a later time!).

  5. Bake for 15-20 minutes, or until flakes easily with a fork.

Avocado Dressing

  1. Combine all ingredients and blend until smooth and creamy. For a thinner consitency, add more water. Add more salt to taste, if desired.

For the tacos

  1. Place baked fish in warm tacos. Top with toppings, drizzle with avocado dressing, and enjoy!
