This Thanksgiving I celebrated two holidays. That’s right, TWO. While the rest of America was enjoying their turkey and their stuffing, November 24th was Thanksgiving and Christmas for us! Because we wouldn’t see my family on Christmas day, we decided to exchange gifts an entire month earlier around a Christmas tree while listening to holiday music and sipping holiday drinks.
Best. Idea. Ever.
So now it’s December 2nd and I’m completely done with my Christmas shopping. While this should be cause for celebration, I’m quickly realizing that this is also really dangerous. My inbox has been filled with sales for: pre-Black Friday, Black Friday, pre-Cyber Monday, Cyber Monday and extended Cyber Monday (also known as Tuesday).
I’m usually good at deleting them before I open them to avoid all temptations, but occasionally a few will slip through leading me to have conversations like this:
“Do I need to invest in this Pet Sweep? Couldn’t I just attach Swiffer dusters to the bottoms of their little feet and let them loose in the house?”
Or, “Do I need to buy this cast iron skillet that is shaped like the United States of America? No. But do I want to eat frittatas every morning that are in the shape of the United States of America?” (Obviously.)
The good news is that there are only three more weeks of hiding out from Christmas sales. In the meantime, I’m going to be focusing my energy on things like this:
Weekday breakfasts in our house are usually quick or prepped the night before – overnight oats and breakfast sandwiches for T or smoothies and avocado toast for me. But weekend breakfasts? That’s a whole other story. Saturday mornings are meant for freshly brewed coffee, reading, and complete breakfasts.
This Southwest breakfast bowl was inspired by a brunch spot in Houston called The Dunlavy. It’s a bowl of brown rice, black beans, marinated tomatoes, roasted breakfast potatoes, white cheddar cheese, avocados, and a fried egg. I usually make brown rice once a week, so it’s easy to grab that from the fridge, and then I’ll quickly marinate the tomatoes while the potatoes are in the oven. The savory combination is so satisfying and comforting and a wonderful way to start the day, giving me all the energy I need to avoid checking my emails!

For the tomatoes
- 1 small container grape tomatoes, halved
- extra virgin olive oil, for drizzling
- 1/2 tsp Italian seasoning
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
For the potatoes
- 1 lb. red potatoes
- 4 tbsp butter
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp freshly ground black pepper
Toppings
- 1 can black beans, drained
- 2 avocados, sliced
- eggs, fried or soft boiled
- brown rice
- white cheddar cheese, grated
For the tomatoes
- In a medium size bowl, let combine the tomatoes, olive oil, and seasoning. Set aside.
For the potatoes
- Preheat oven to 400 degrees.
- Pierce the potatoes and place on a baking tray. Bake for 20-25 minutes, or until fork tender.
- Let cool, then cut into bite size pieces. Melt 2 tbsp butter in a hot skillet, then add half of the potatoes. Let the potatoes sit undisturbed for a few minutes, about 2-4 minutes, sprinkle with half of the seasonings, then flip over to brown the other side. Allow to brown for 2-4 minutes, then remove and set aside. Repeat the remaining potatoes and seasoning.
For the bowl
- Place brown rice, potatoes, cheese, beans, tomatoes, avocados, and egg in the bowl. Serve warm.
